sweet potato pie (3)

Pastry for 9-inch one crust pie
2 c hot cooked mashed sweet potatoes
(about 2 medium potatoes)
3/4 c sugar
1 T all-purpose flour
1/2 t baking powder
1/2 t ground nutmeg
1/4 c butter or margarine
1 egg, slightly beaten
1 T lemon juice
1 t vanilla extract
1 1/4 c milk or evaporated milk

Heat oven to 425. Prepare pastry. Combine sugar, flour, 
baking powder and nutmeg in medium bowl; add remaining 
ingredients and beat until well blended. 
Place pastry-lined pie plate on oven rack, 
pour in filling. Bake 15 minutes.

Reduce oven temperature to 350. Bake until knife 
inserted in center comes out clean, 
about 45 minutes longer.
